There are many many types of cheese made from goat milk. But the white, mild, soft cheese we usually refer to as ‘chevre’ has been made in Italy and France for hundreds of years. It was first made in the USA in 1980 and quickly became popular. Chevre may vary in moistness and tanginess depending on the characteristics of the goat milk and the time it coagulates and drains. Ruby Goat Dairy’s chevre is made from pasteurized goat milk and is fresh & mild in flavor and aroma. It does not have a strong ‘goaty’ aroma. We offer it plain or with herbs.
