Description
Ricotta has been a traditional cheese of Italy for many centuries.
It is the cheese usually associated with lasagna or ravioli but can be used creatively in pancakes, ‘stuffing’ for crepes, cookies, served with olive oil, garlic and veggies or simply with honey, nuts and fruit for an easy dessert. There are innumerable recipes for using ricotta!
Raw milk is used to make ricotta but the heating of the milk during curd formation more than meets the temperature requirements for pasteurization.
